Barbera d'Asti D.O.C.G. Superiore from 100% Barbera
grapes: it has a ruby red color with slightly garnet
reflections, has a complex and spicy
aroma with hints of cloves, pepper, eucalyptus, tobacco
and vanilla and caramelized notes at the end.
Vinification. The alcoholic fermentation with maceration
lasts 7/8 days at a constant temperature of around 24°C
in order to best extract the aromas of the vine.
Refinement: at the end of the alcoholic fermentation, the
malolactic fermentation is immediately started in
stainless steel tanks at a temperature of 18°C. Once
fermentation is complete, the wine is aged in 75 hl
French oak barrels where it rests for approximately 12
months. After a further stop of a month in stainless
steel, the wine passes into the bottle where, before
marketing, it is refined for 6 months.
