Spontaneous fermentation with
indigenous yeasts in oak vats, without
temperature control, with prolonged
maceration on the skins for one month.
Aged for twelve months on the fine lees
in concrete tanks and at least six months
in the bottle. Medium intense ruby red color, very
clear tending to transparent. Bouquet
with delicate floral aromas of broom and
roses, fruity notes of raspberry, blackberry and black cherry, to which are
added, in closing, surprising spicy notes of star anise and ginger.
