After the whole cluster soft pressing takes placeracking by natural
sedimentation of the must. The fermentationtakes place in French oak
barrels of 12 and 15 hl with subsequentmalolactic fermentation. The
aging on the lees in the barrel lasts 12 months and then 6 months in
the bottle.Sensory notes.Elegant structure and beautiful consistency,
with intense fruity notes.Excellent structure, savory and mineral with a
long persistence on the palate. We recommend pairing with refined
dishes, including meat.
